I love to meal prep! I look forward to making a new grocery list and finding new recipes. Where I get stumped is when it comes to what to make for lunch. I try to find little snacks to make up my entire lunch. I'm trying to eat less meat, which isn't really hard for me to achieve. I can remember a young Courtney who swore she was a vegetarian. I found this recipe on Pintrest and knew I had to give it a try. Y'all this was delicious! I followed the exact recipe except I had apple cider vingear and not cider vinegar and it turned out great!
