I tried something new this past week. I don't make a lot of stews or soups but I wanted to try this Caribbean Fish stew. It was so easy to make and only took 25 minutes. I was kind of surprised when I finished because making it was pretty simple. I will say this meal was better the next day and even better the day after that. I'll definitely be making more stews for the fall.
2 lbs cod, diced 2 large tomatoes, sliced into big chunks 1 large onions, cut into large chunks 5 garlic cloves, chopped 1/2 cup Worcestershire sauce 1/3 cup balsamic vinegar 1/2 cup fresh parsley, chopped 1 tsp celtic salt 1 tsp black pepper 2 tsp dried thyme 2 Tbsp olive oil 1/2 cup ketchup 1/2 cup water
In a large pot, heat the olive oil over medium to high heat. Add all the ingredients minus the fish.
Bring the mixture to a rapid boil, then lower the flame a bit and let it cook for about 15 minutes. Add the fish and cook for 10 minutes until the fish is fully cooked. Turn the heat off when the fish is cooked. I served it over brown rice. Enjoy!
